Garlic Bread Grilled Cheese Sandwich

4 slices of thick-cut sourdough bread

4 tablespoons unsalted butter, softened

2 cloves of garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh, chopped)

1 ½ cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Prepare the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, dried parsley, and a pinch of salt and pepper until well combined to create a flavorful garlic butter spread.

    Assemble the Sandwiches: Spread the garlic butter generously on one side of each slice of sourdough bread. On the unbuttered side of two slices, layer the cheddar and mozzarella cheese evenly.

      Close the Sandwiches: Place the other two slices of bread, buttered side up, on top of the cheese-laden slices to form two sandwiches.

        Grill the Sandwiches: Preheat a skillet or griddle over medium heat. Transfer the sandwiches to the skillet and grill for about 4-5 minutes until golden brown. Carefully flip the sandwiches and continue grilling for another 4-5 minutes, pressing down gently with a spatula to ensure the cheese melts and the bread toasts perfectly.

          Melt the Cheese: Ensure the cheese is thoroughly melted; you can lower the heat if the bread is browning too quickly before the cheese melts completely.

            Slice and Serve: Remove the sandwiches from the skillet and let them cool for a minute before slicing in half. Serve warm with marinara sauce or your favorite dipping sauce if desired.
