Ingredients

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup granola (your favorite blend)

Pinch of salt

Optional: 1 tablespoon of lemon juice (to enhance the strawberry flavor)

Instructions

Prep the Strawberries: In a medium bowl, mash half of the sliced strawberries with a fork until they form a chunky purée. Leave the other half sliced for adding texture to the discs. If using, add lemon juice to the mashed strawberries for a brighter flavor.

Combine Ingredients: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, mashed strawberries, and a pinch of salt. Stir until well combined, making sure the yogurt is sweetened to your preference.

Add Sliced Strawberries: Gently fold in the remaining sliced strawberries to the yogurt mixture, ensuring they are evenly distributed.

Prepare the Molds: Line a muffin tin or silicone disk molds with parchment paper or lightly grease them. This helps to remove the discs easily after freezing.

Spoon the Mixture: Scoop the yogurt mixture into the prepared molds, filling each one about three-quarters full.

Add Granola Topping: Sprinkle a layer of granola on top of each filled mold, pressing it down gently to help it set into the yogurt.

Freeze: Place the muffin tin or molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

Pop the Discs Out: Once frozen, gently pull on the parchment paper or flex the silicone molds to release the discs. If using a muffin tin, run warm water around the outside to help loosen them.

Serve: Enjoy immediately, or store the discs in an airtight container in the freezer for up to one month.
