Ingredients
  

2 cups plain Greek yogurt

1/2 cup unsweetened almond milk

1/2 cup pitted Medjool dates, chopped

1/2 cup shelled pistachios, finely chopped

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

A pinch of sea salt

Extra chopped pistachios for garnish

Instructions
 

Begin by soaking the chopped dates in warm water for about 10 minutes to soften them. Drain and set aside.

    In a medium mixing bowl, combine the Greek yogurt, almond milk, honey (or maple syrup), vanilla extract, and sea salt. Whisk until smooth and the mixture is well blended.

      Gently fold in the softened dates and chopped pistachios into the yogurt mixture, ensuring they are evenly distributed.

        Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Tap the molds gently on the counter to eliminate any air bubbles.

          Insert popsicle sticks into the molds and transfer them to the freezer. Freeze for at least 4-6 hours, or until completely firm.

            To remove the popsicles, run warm water over the outside of the molds for a few seconds until they release easily.

              Optional: Roll the bottoms of the pops in extra chopped pistachios for a delightful crunchy finish.
