1 cup Medjool dates, pitted and chopped

1/2 cup unsalted roasted pistachios, roughly chopped

2 tablespoons honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

A pinch of salt

1/4 cup shredded coconut (optional, for coating)

Prep the Dates: Start by finely chopping the pitted Medjool dates. If they are too sticky, you can sprinkle a little cornstarch on them to make them easier to handle.

    Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup if using), vanilla extract, and a pinch of salt. Stir well until all ingredients are fully blended.

      Combine Ingredients: Fold in the chopped dates and pistachios into the yogurt mixture. Make sure they are evenly distributed throughout.

        Scoop and Shape: Using a tablespoon or a small ice cream scooper, scoop the yogurt mixture onto a lined baking sheet. Flatten each scoop slightly to form coins. The size can be about 1.5 inches in diameter.

          Optional Coconut Coating: If you wish to add a coconut layer, place the shredded coconut on a plate. Gently press one side of each yogurt coin into the coconut to coat.

            Freeze: Place the baking sheet in the freezer and let the coins solidify for at least 4 hours, preferably overnight.

              Serve & Store: Once frozen, enjoy the date coins immediately or transfer them to an airtight container. They can be stored in the freezer for up to a month.
