2 cups fresh pineapple chunks (or canned, drained)

1 cup plain Greek yogurt

1/2 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1/4 cup shredded coconut (unsweetened, optional)

Pinch of salt

Prepare the Pineapple: If using fresh pineapple, peel, core, and chop the pineapple into chunks. If using canned pineapple, ensure it is well-drained.

    Blend the Ingredients: In a blender or food processor, combine the pineapple chunks, Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

      Add Shredded Coconut: If desired, stir in the shredded coconut to add a bit of texture to your bars.

        Pour into Molds: Pour the blended mixture into silicone molds or a lined 8x8-inch baking dish. Tap gently on the counter to remove air bubbles.

          Freeze: Cover the molds or dish with plastic wrap and freeze for at least 4 hours, or until the bars are completely solid.

            Release and Serve: If using a baking dish, lift the block of frozen yogurt out and cut into bars. If using molds, simply pop the bars out.

              Optional Garnish: For added texture and flavor, sprinkle the tops with extra shredded coconut or serve with a drizzle of honey on top just before serving.
