2 cups fresh ripe peaches, peeled and diced

1 tablespoon lemon juice

2 tablespoons honey or maple syrup

1 teaspoon cinnamon

2 cups Greek yogurt (plain or vanilla)

1 cup granola (preferably honey or vanilla flavored)

1/2 cup almond flour

1/4 cup coconut oil, melted

2 tablespoons brown sugar

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Peach Mixture: In a medium-sized bowl, combine the diced peaches, lemon juice, honey or maple syrup, and cinnamon. Stir gently to combine and set aside to marinate for about 10 minutes, allowing the flavors to meld.
