Frozen Yogurt Matcha Granola Pops

Ingredients
  

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

2 teaspoons culinary matcha powder

1 teaspoon vanilla extract

1/2 cup granola (store-bought or homemade)

1/4 cup shredded coconut (optional)

Fresh berries (strawberries, blueberries, or raspberries for garnish)

Instructions
 

Prepare the Base: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), matcha powder, and vanilla extract. Stir well until the mixture is smooth and the matcha is thoroughly incorporated.

    Granola Layer: Take your granola and set aside half (1/4 cup) for garnishing. Gently fold the rest of the granola into the yogurt mixture, ensuring even distribution without crushing it too much.

      Fill the Molds: Pour the matcha yogurt mixture into popsicle molds, filling them about 3/4 full to allow space for expansion. Tap the molds gently on the counter to remove air bubbles.

        Add Garnish: Sprinkle the remaining granola and shaved coconut on top of each mold. If desired, add a few fresh berries into each mold for a fruity surprise inside!

          Insert Sticks: Place the popsicle sticks into the center of each mold, making sure they are centered and secure.

            Freeze: Carefully place the filled molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

              Release the Pops: To remove the pops, run warm water over the outside of the molds for a few seconds, and gently pull the pops out.

                Serve and Enjoy: Enjoy your pops immediately, or keep them stored in a zip-lock bag or airtight container in the freezer for up to 2 weeks.
