Frozen Yogurt Mango Kiwi Bars

2 ripe mangoes, peeled and diced

2 ripe kiwis, peeled and sliced

3 cups plain Greek yogurt (or coconut yogurt for dairy-free)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Juice of 1 lime

1/4 teaspoon salt

Optional: shredded coconut for garnish

Instructions
 

Prepare the Mango Purée: In a blender, combine the diced mangoes, lime juice, and 1 tablespoon of honey or maple syrup. Blend until smooth and set aside.

    Make the Yogurt Mixture: In a mixing bowl, whisk together the Greek yogurt, remaining honey or maple syrup, vanilla extract, and salt until fully combined and smooth.

      Layering the Bars: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easier removal later. Pour half of the yogurt mixture into the bottom of the dish and spread evenly.

        Add Mango Layer: Spoon the mango purée evenly over the yogurt layer, using a spatula to spread it out gently.

          Finish with the Yogurt: Pour the remaining yogurt mixture over the mango layer and smooth it out carefully.

            Add Kiwi Slices: Evenly distribute the sliced kiwis over the top of the yogurt mixture, pressing them down slightly to adhere.

              Freeze: Cover the dish with plastic wrap and freeze for at least 4-6 hours, or until completely solid.

                Serve: Once frozen, lift the bars out of the dish using the parchment paper overhang. Cut into squares or bars of desired size. If desired, sprinkle with shredded coconut before serving for an added tropical touch.

                  Enjoy: These bars can be stored in an airtight container in the freezer for up to 2 weeks. Enjoy a refreshing treat on a hot day!
