Ingredients

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

2 cups plain Greek yogurt (or your favorite flavored yogurt)

1 cup condensed milk

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

1 tsp vanilla extract

1/2 cup whipped cream (optional, for topping)

Fresh lemon slices and mint leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Make the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of an 8x8 inch baking pan to form an even layer.

Bake the Crust: Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.

Prepare the Filling: In a large mixing bowl, whisk together the Greek yogurt, condensed milk, lemon juice, lemon zest, and vanilla extract until smooth and well combined. Make sure there are no lumps.

Assemble the Pie Squares: Pour the lemon filling over the cooled graham cracker crust, spreading it evenly.

Freeze the Mixture: Cover the baking pan with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until fully set.

Cut into Squares: Once the filling is completely frozen, remove from the freezer. Use a sharp knife to cut into squares. You can gently warm the knife under hot water to make cutting easier.

Serve: If desired, top each square with a dollop of whipped cream and garnish with fresh lemon slices and mint leaves. Enjoy your refreshing treat!
