Ingredients

1 cup Greek yogurt (plain or vanilla)

1/2 cup fresh lemon juice (about 2-3 lemons)

1/3 cup honey or maple syrup (adjust to taste)

Zest of 2 lemons

1/2 teaspoon vanilla extract

1 cup crushed graham crackers (about 8 full sheets)

4 tablespoons unsalted butter, melted

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, mix the crushed graham crackers, melted butter, and a pinch of salt until well combined. The mixture should resemble wet sand.

Form the Coins: Line a muffin tin with cupcake liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner, creating a small, even crust. Use your fingers or the bottom of a shot glass to pack it tightly.

Make the Yogurt Filling: In a mixing bowl, combine the Greek yogurt, fresh lemon juice, honey or maple syrup, lemon zest, and vanilla extract. Whisk until smooth and creamy. Taste the mixture for sweetness and adjust if necessary.

Fill the Cups: Spoon about 2 tablespoons of the lemon yogurt mixture over each graham cracker crust in the muffin tin, smoothing out the top with a spatula or spoon.

Freeze: Place the muffin tin in the freezer and let it freeze for at least 4 hours, or until the yogurt is firmly set.

Unmold: Once frozen, gently peel away the cupcake liners from each coin. If they stick, run a warm knife around the edges to loosen them.

Serve: Arrange the Frozen Yogurt Lemon Pie Coins on a platter and garnish with fresh mint leaves if desired. Serve immediately and enjoy a refreshing treat!
