Ingredients

2 cups plain Greek yogurt (full-fat or low-fat)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup granola (your favorite mix)

1/2 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup shredded coconut (unsweetened)

1/4 cup sliced almonds or walnuts

Optional: mini chocolate chips or nut butter drizzle for extra flavor

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until well incorporated and smooth.

Spread the Yogurt: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the parchment and spread it evenly with a spatula until about 1/2 inch thick.

Top with Toppings: Sprinkle the granola evenly over the yogurt layer. Then, add the mixed berries on top, followed by shredded coconut and sliced almonds (or walnuts). If desired, sprinkle mini chocolate chips or drizzle nut butter for added flavor.

Freeze the Bark: Place the baking sheet in the freezer and freeze for approximately 4-6 hours, or until the yogurt is firm and completely frozen.

Break and Serve: Once frozen, remove from the freezer and let it sit for about 5 minutes at room temperature. This helps soften it slightly for easy breaking. Use your hands to break it into pieces or cut it into squares.

Store: Store any leftovers in an airtight container in the freezer for up to 2 weeks. Enjoy directly from the freezer for a quick and nutritious breakfast or snack!
