1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

1 cup fresh blueberries (plus extra for topping)

1 teaspoon lemon juice

4 slices whole-grain bread (your choice)

2 tablespoons melted coconut oil or butter

A pinch of salt

Optional toppings: granola, chia seeds, or shredded coconut

Prepare Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Stir until well combined. Gently fold in the fresh blueberries, being careful not to mash them.
