When making Frozen Yogurt Berry Cheesecake Coins, taste-testing is a crucial step to ensure a balanced flavor profile. As you create the yogurt filling, take a moment to sample the mixture before you incorporate the berries. This is your opportunity to adjust sweetness or acidity levels. Depending on the tartness of your chosen berries, you may find that you want to add a touch more honey or sugar to balance the flavors. Remember, the goal is to create a creamy, delicious filling that harmonizes with the natural sweetness and acidity of the berries you’ll be using.

Ingredients

1 cup plain Greek yogurt

½ cup cream cheese, softened

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 cup mixed berries (blueberries, raspberries, strawberries), chopped if large

½ cup crushed graham crackers

2 tablespoons powdered sugar (optional, for sweetening)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese and Greek yogurt. Use an electric mixer to blend until smooth and creamy. Add honey (or maple syrup) and vanilla extract, mixing until well incorporated.

Sweeten if Needed: Taste the mixture and, if desired, add powdered sugar to increase sweetness. Mix again until well blended.

Incorporate Berries: Gently fold in the chopped mixed berries into the yogurt cheesecake mixture. Be careful not to break the berries too much; you want to keep some of them whole for texture.

Create the Base: Line a baking sheet with parchment paper. In small round molds or a silicone muffin tray, spoon a thin layer of crushed graham crackers to form the base of the coins. Press down with the back of a spoon to compact.

Add Cheesecake Mixture: Spoon the yogurt berry cheesecake mixture on top of the graham cracker base, filling each mold to the top. Smooth the tops with a spatula.

Freeze: Carefully place the filled molds in the freezer and let them freeze for at least 4-6 hours, or until completely firm.

Remove and Serve: Once frozen solid, gently pop the cheesecake coins out of the molds. Let them sit at room temperature for about 5-10 minutes for easier handling.

Garnish (Optional): If desired, garnish with fresh mint leaves before serving. Enjoy your refreshing, no-bake treats!
