Ingredients

2 cups plain Greek yogurt (full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen; options include strawberries, blueberries, raspberries, and blackberries)

1/4 cup granola (for crunch)

1/4 cup unsweetened coconut flakes (optional for extra texture)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and fully incorporated.

Spread the Mixture: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it out evenly with a spatula, about 1/4 inch thick.

Add the Toppings: Scatter the mixed berries over the yogurt layer. Gently press them into the yogurt to ensure they stick. Then sprinkle the granola and coconut flakes (if using) evenly across the top.

Freeze: Place the baking sheet in the freezer and allow the yogurt bark to freeze for at least 3-4 hours or until completely solid.

Break into Pieces: Once frozen, remove the yogurt bark from the freezer. Lift the parchment paper to easily detach the bark from the baking sheet. Use your hands or a knife to break the bark into pieces of your desired size.

Store: Enjoy immediately or store the pieces in an airtight container in the freezer for up to two weeks.
