Frozen Watermelon Pops

4 cups of seedless watermelon, cubed

1 tablespoon of fresh lime juice

1 tablespoon of honey or agave syrup (optional for sweetness)

A pinch of sea salt

Fresh mint leaves for garnish (optional)

6-8 popsicle sticks or molds

Instructions
 

Prepare the Watermelon: Start by chopping the watermelon into small cubes. Place the cubes into a blender or food processor.

    Blend the Mixture: Add the fresh lime juice, honey (if using), and a pinch of sea salt to the blender. Blend until smooth, ensuring there are no chunks left.

      Taste and Adjust: Taste the blended watermelon mix. If it’s not sweet enough for your liking, add a little more honey or agave syrup and blend again until combined.

        Pour into Molds: Pour the watermelon mixture evenly into popsicle molds. Leave a small gap at the top of each mold for expansion as they freeze.

          Insert Sticks: If using popsicle sticks, insert them into the center of each mold. If your popsicle molds come with built-in sticks, simply place the lids on.

            Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until solid.

              Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. If desired, garnish with fresh mint leaves before serving.
