2 cups fresh strawberries, hulled and sliced

1 cup lemon juice (about 4-5 large lemons)

1 cup heavy cream

½ cup sweetened condensed milk

¼ cup honey (or maple syrup for a vegan option)

Zest of 2 lemons

Pinch of salt

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with 2 tablespoons of honey and a pinch of salt. Let it sit for about 15-20 minutes to macerate, allowing the strawberries to release their juices.

    Make the Lemon Cream Base: In a separate bowl, whisk together the heavy cream, remaining honey, lemon juice, and lemon zest until smooth and slightly thickened. If you have an electric mixer, you can whisk the cream until soft peaks form for a fluffier texture.

      Blend the Strawberries: Using a blender or food processor, puree the macerated strawberries until smooth. You can leave some small chunks for texture if desired.

        Combine: Gently fold the strawberry puree into the lemon cream mixture. Be careful not to over-mix; you want to see streaks of pink and yellow.

          Fill Molds: Spoon or pour the mixture into silicone molds or ice cube trays, filling them about three-quarters full. Tap the molds on the counter to remove any air bubbles and ensure an even distribution.

            Freeze: Cover the molds with plastic wrap and freeze for at least 4-6 hours, or until fully set.

              Serve: To remove the cream drops from the molds, allow them to sit at room temperature for a minute or run warm water over the outside of the molds for easier release. Serve immediately as a refreshing treat!
