2 cups fresh strawberries, hulled and chopped

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust to sweetness preference)

1 teaspoon vanilla extract

1/2 cup shredded coconut (unsweetened for a healthier option, or sweetened for added sweetness)

Optional: A pinch of salt for flavor enhancement

Instructions
 

Prepare the Strawberries: In a blending container, add the chopped strawberries. Blend until smooth, but still leave a few chunks for texture if desired. Transfer to a mixing bowl.

    Combine Coconut Mix: In the same blender (no need to clean it), add the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until well combined and smooth.

      Layering Flavors: In your popsicle molds, pour a small layer of the coconut mixture to cover the bottom. Add a few spoonfuls of the strawberry puree on top. Repeat the layers until the molds are filled, finishing with a layer of coconut mixture.

        Add Texture: Sprinkle shredded coconut on top of each mold for a delightful texture, pressing it down slightly into the mixture.

          Insert Sticks: Place the popsicle sticks into the molds, making sure they reach the bottom of the mixture.
