Ingredients

1 ½ cups graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 ½ cups fresh raspberries (plus extra for garnish)

1 tablespoon lemon juice

Mint leaves for garnish (optional)

Instructions

Preheat the oven to 350°F (175°C).

Prepare the crust: In a medium-sized mixing bowl, combine graham cracker crumbs, cocoa powder, and granulated sugar. Mix well to ensure the ingredients are thoroughly incorporated. Add melted butter and stir until the mixture resembles wet sand.

Form the tart shells: Press the mixture evenly into the bottom and up the sides of a tartlet pan (or mini muffin tin for smaller tarts). Use your fingers or the back of a measuring cup to pack it down tightly.

Bake the crust: Place the crust in the preheated oven and bake for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.

Prepare the filling: In a mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt until smooth.

Blend in the raspberries: Gently fold in the fresh raspberries, being careful not to crush them too much to keep some whole for texture.

Fill the crusts: Once the tart shells are cool, spoon the raspberry yogurt mixture evenly into each shell. Smooth the tops with a spatula if needed.

Freeze the tarts: Cover the tarts with plastic wrap or aluminum foil and place them in the freezer. Freeze for at least 4 hours or until completely set.

Serve: When ready to serve, let the tarts sit at room temperature for about 5-10 minutes for easy removal. Garnish with extra fresh raspberries and mint leaves if desired. Enjoy!
