Ingredients

4 ripe peaches, peeled and chopped

1/2 cup granulated sugar (adjust based on sweetness of peaches)

1 tablespoon lemon juice

1 cup cold water

Pinch of salt

Instructions

Prepare the Peaches: Start by peeling the peaches. To make this easier, you can blanch them in boiling water for 30 seconds and then transfer them to an ice bath. Once cooled, the skins should slip off easily. Chop the peaches into small pieces and place them in a blender or food processor.

Blend the Mixture: Add the granulated sugar, lemon juice, cold water, and a pinch of salt to the blender with the chopped peaches. Blend until you achieve a smooth consistency. Taste the mixture and adjust the sweetness by adding more sugar if needed.

Chill the Mixture: Once blended, pour the peach mixture into a bowl and cover it with plastic wrap. Refrigerate for about 1-2 hours to chill thoroughly, which will help with the freezing process.

Freeze the Sorbet: Once chilled, transfer the mixture into an ice cream maker. Process according to the manufacturer’s instructions until it reaches a soft-serve consistency. If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer.

Manual Freezing: If using the shallow dish method, stir the mixture every 30 minutes with a fork for about 3-4 hours to break up ice crystals and ensure a smooth texture.

Final Freeze: After reaching the desired consistency, transfer the sorbet to an airtight container. Place it in the freezer for at least 2 more hours to firm up completely.

Serve: Scoop the frozen peach sorbet into bowls or cones. Enjoy your refreshing treat on a hot day or as a delightful dessert after any meal!
