1 cup Greek yogurt (plain or vanilla)

½ cup strong brewed coffee, cooled

¼ cup unsweetened cocoa powder

¼ cup honey or maple syrup (adjust for sweetness)

½ tsp vanilla extract

½ tsp cinnamon (optional)

1 cup rolled oats

½ cup crushed nuts (e.g., walnuts or almonds)

½ cup chocolate chips (dark or semi-sweet)

1 cup granola or your favorite crunchy cereal

A pinch of salt

Instructions
 

Prepare the Coffee Mixture: In a mixing bowl, combine the cooled brewed coffee, cocoa powder, honey (or maple syrup), vanilla extract, and cinnamon (if using). Whisk until smooth and well blended. Ensure there are no lumps from the cocoa powder.

    Incorporate the Yogurt: Gradually add the Greek yogurt into the coffee mixture. Stir gently until the yogurt is completely incorporated and the mixture is creamy.

      Mix in Dry Ingredients: In another large bowl, combine the rolled oats, crushed nuts, salt, and half of the chocolate chips (reserving the other half for topping). Mix the dry ingredients well.

        Combine Mixtures: Pour the yogurt-coffee mixture over the dry ingredients. Stir thoroughly to ensure everything is combined evenly.

          Prepare the Pan: Line an 8x8 inch (or similar size) baking pan with parchment paper, allowing overhang on two sides for easy removal later.

            Spread the Mixture: Pour the yogurt-oat mixture into the prepared pan. Use a spatula to spread it evenly into all corners, pressing it down firmly.

              Add Toppings: Sprinkle the reserved chocolate chips and granola over the top of the mixture, pressing down gently to ensure they stick.

                Freeze: Cover the pan with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until the bars are completely firm.

                  Serve: Once frozen, lift the bars out using the parchment paper overhang. Cut into squares or rectangles and enjoy! Store any leftovers in an airtight container in the freezer.
