Ingredients

1 cup brewed coffee (cooled)

1 cup almond milk (or any milk of choice)

1/2 cup chocolate protein powder (or vegan alternative)

1/4 cup unsweetened cocoa powder

1/4 cup maple syrup (or honey)

1 tsp vanilla extract

1/4 tsp sea salt

Optional toppings: chocolate chips, chopped nuts, or shredded coconut

Instructions

Prepare the Coffee: Brew your coffee and let it cool to room temperature. You can use iced coffee for a quicker option.

Mix Ingredients: In a large mixing bowl, combine the cooled coffee, almond milk, chocolate protein powder, cocoa powder, maple syrup, vanilla extract, and sea salt. Whisk everything together until you have a smooth and uniform mixture.

Taste and Adjust: Take a small taste of the mixture. If you prefer it sweeter, add more maple syrup to your liking and mix well.

Fill Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion during freezing. You can add optional toppings like chocolate chips or chopped nuts into the molds if desired.

Insert Sticks: If your molds come with sticks, insert them carefully into the mixture. If not, freeze them for about an hour before adding the sticks, as the mixture will start to firm up.

Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid.

Unmold and Serve: To release the pudding pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and enjoy immediately!

Store Remaining Pops: If you have leftover pudding pops, wrap them in plastic wrap or store them in an airtight container to keep them fresh in the freezer.
