Ingredients

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt

1/2 cup coconut milk

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon fresh lime juice

1/2 teaspoon vanilla extract

A pinch of salt

Optional: chunks of coconut or diced fruits for added texture

Instructions

Prepare the Mangoes: Start by peeling and dicing the ripe mangoes into small pieces. Ensure that they are firm and sweet for the best flavor.

Blend the Mixture: In a blender, combine the diced mangoes, Greek yogurt, coconut milk, honey (or maple syrup), lime juice, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste and adjust the sweetness as desired.

Optional Add-ins: If you’d like texture in your popsicles, fold in some chunks of coconut or diced fruit into the blended mixture.

Fill the Molds: Pour the mango yogurt mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

Insert Sticks: Place the sticks into the molds and ensure they stand upright.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until fully solid.

Unmold and Serve: When ready to serve, run the molds under warm water for a few seconds to easily release the popsicles. Enjoy your delicious and refreshing frozen mango yogurt popsicles!
