Ingredients

2 cups ripe mango, diced (fresh or frozen)

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup granola (your favorite mix)

1/2 cup shredded coconut (sweetened or unsweetened)

1/4 teaspoon sea salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Mango Puree:

    - If using fresh mango, peel and dice the mango into small pieces. If using frozen mango, allow it to thaw for about 10 minutes.

      - In a blender or food processor, combine the diced mango, Greek yogurt, honey/agave syrup, vanilla extract, and sea salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if necessary.

        Mix the Base:

          - In a medium-sized bowl, add the granola and shredded coconut. Mix well to ensure the coconut and granola are evenly distributed.

            Shape the Rounds:

              - Line a baking sheet with parchment paper. Using a tablespoon or small round mold, scoop the mango yogurt mixture out and form rounds, about 1.5 inches in diameter, placing them on the parchment-lined sheet.

                - After forming the yogurt rounds, sprinkle a small amount of the granola and coconut mixture on top of each yogurt round, gently pressing it into the mixture so it adheres.

                  Freeze:

                    - Place the baking sheet in the freezer for about 4-6 hours, or until the yogurt rounds are completely frozen.

                      Serve:

                        - Once frozen, remove the rounds from the baking sheet. They can be enjoyed immediately or stored in an airtight container in the freezer for up to two weeks.

                          - For a refreshing touch, garnish with fresh mint leaves before serving.

Prep Time: 15 minutes | Total Time: 4-6 hours (mostly freezing) | Servings: 12 rounds
