Frozen Mango Lemon Yogurt Bars

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt

1/2 cup honey (or maple syrup for a vegan option)

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1/2 teaspoon vanilla extract

Pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Mango: In a blender or food processor, combine the diced mangoes and blend until smooth without any chunks. You should get about 2 cups of mango puree.

    Mix Ingredients: In a large mixing bowl, combine the mango puree, Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and a pinch of salt. Stir until completely smooth and well combined.

      Taste Test: Give the mixture a little taste and adjust sweetness or lemon juice according to your preference. If you like it sweeter, add a little more honey.

        Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal.

          Pour the Mixture: Pour the mango yogurt mix into the prepared dish, smoothing it out with a spatula to make it even.

            Freeze: Cover the dish with plastic wrap or foil and place it in the freezer for at least 4-6 hours, or until the mixture is fully frozen.

              Slice into Bars: Once the mixture is solid, remove it from the freezer and use the parchment overhang to lift it out of the dish. Place it on a cutting board and slice it into bars of your desired size.

                Garnish and Serve: If desired, garnish each bar with fresh mint leaves and serve immediately! For storage, keep the bars in an airtight container in the freezer.
