1/2 cup cream cheese, softened

1/3 cup honey or maple syrup (adjust to taste)

Zest of 1 large lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/2 teaspoon fine sea salt

1/2 cup graham cracker crumbs

2 tablespoons unsalted butter, melted

Fresh berries (e.g., blueberries, raspberries) for topping (optional)

Instructions
 

Prepare the Cheesecake Mixture: In a large mixing bowl, combine the softened cream cheese and Greek yogurt. Use an electric mixer to blend them together until smooth and creamy.

    Flavor it Up: Add in the honey (or maple syrup), lemon zest, fresh lemon juice, vanilla extract, and fine sea salt. Mix on medium speed until all ingredients are well combined and the mixture is light and fluffy.

      Prepare the Crust: In a small bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated and resemble wet sand.
