Ingredients

1 cup unsweetened shredded coconut

1 cup almond flour

1/4 cup coconut oil, melted

1/4 cup maple syrup

Zest of 2 limes

1/4 cup fresh lime juice (about 2 limes)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 can (13.5 oz) full-fat coconut milk

1 tablespoon cornstarch

Instructions

Prepare the Base: In a mixing bowl, combine the shredded coconut, almond flour, melted coconut oil, maple syrup, lime zest, lime juice, vanilla extract, and salt. Mix until well combined.

Form the Base: Press the mixture firmly into the bottom of a parchment-lined 8x8 inch baking dish, making sure it's evenly spread. Chill in the refrigerator for about 30 minutes.

Make the Coconut Cream Layer: In a medium saucepan over low heat, combine the full-fat coconut milk and cornstarch. Whisk continuously until the mixture thickens (about 5-7 minutes). Remove from heat and allow it to cool slightly.

Layer the Bars: Pour the coconut cream mixture over the chilled base, using a spatula to spread it evenly.

Freeze: Cover the baking dish with plastic wrap or a lid and place it in the freezer for at least 4 hours, or until solid.

Cut and Serve: Once the bars are completely frozen, remove from the dish using the parchment paper. Cut into squares or rectangles as desired.

Garnish (Optional): For extra flair, sprinkle a little lime zest or toasted coconut on top before serving!
