Ingredients
  

2 cups grated carrots (about 3 medium carrots)

1 cup rolled oats

1/2 cup almond flour

1/2 cup pitted Medjool dates (soaked in warm water for 10 minutes, then drained)

1/4 cup unsweetened shredded coconut

1/4 cup walnuts, chopped

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Pinch of salt

Optional: 1/4 cup raisins or cranberries for added sweetness

Instructions
 

Prepare the Carrots: Begin by peeling and grating the carrots. Measure out 2 cups and set aside.

    Process the Base: In a food processor, combine the soaked dates, rolled oats, almond flour, shredded coconut, maple syrup (or honey), vanilla extract, cinnamon, nutmeg, and salt. Pulse until the mixture turns into a sticky, crumbly texture.

      Add Carrots and Nuts: Add the grated carrots, chopped walnuts, and optional dried fruits into the food processor. Pulse a few times until all ingredients are well combined, taking care not to over-process; the mixture should be thick and chunky.

        Press into the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the prepared dish and press it down firmly and evenly using your hands or a spatula.

          Freeze: Cover the dish with plastic wrap or the overhanging parchment paper and place it in the freezer for at least 2 hours, or until firm.

            Slice into Bars: Once frozen solid, remove the mixture from the dish using the parchment overhang. Place it on a cutting board and slice it into bars or squares of your desired size.

              Store: Wrap each energy bar individually in parchment paper or store them in an airtight container in the freezer for up to 3 months. Allow to sit at room temperature for a few minutes before enjoying.
