2 cups fresh or frozen blueberries

1 tablespoon fresh lemon juice

Zest of 1 lemon

3 tablespoons honey or maple syrup (adjust for sweetness preference)

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (almonds or walnuts), optional

Instructions
 

Prepare the Blueberries: If using fresh blueberries, rinse them gently. In a medium bowl, combine the blueberries, lemon juice, lemon zest, and 1 tablespoon of honey (or maple syrup). Toss gently to combine and set aside to marinate while you prepare the crumble.

    Make the Crumble Mixture: In a separate large bowl, mix together the rolled oats, almond flour, melted coconut oil, remaining honey (or maple syrup), vanilla extract, cinnamon, and salt. Stir until all ingredients are well combined and the mixture resembles a moist crumbly texture. If desired, add chopped nuts for extra crunch.

      Assemble the Bites: Line a 9x9 inch baking dish with parchment paper. Press half of the crumble mixture into the bottom of the dish to form an even layer. Spread the marinated blueberries evenly over the crust. Top with the remaining crumble mixture, pressing gently to ensure it adheres.

        Freeze: Place the dish in the freezer for at least 2-3 hours, or until the bites are completely frozen.
