Ingredients
  

1 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 cup fresh or frozen blueberries

1/4 cup unsweetened shredded coconut (optional, for rolling)

Extra lemon zest (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the almond flour, baking powder, and salt. Whisk together until well blended.

      In a separate bowl, mix together the melted coconut oil, honey (or maple syrup), vanilla extract, lemon zest, and lemon juice. Stir until smooth and well incorporated.

        Combine the wet and dry ingredients by adding the wet mixture to the dry mixture. Stir until a dough forms.

          Gently fold in the blueberries until distributed evenly throughout the dough.

            Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls. Place the cookie bites on the prepared baking sheet, spaced evenly apart.

              Bake in the oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                Optional: If you wish to coat the cookie bites, roll them in the shredded coconut while still slightly warm to help the coconut stick.

                  Freeze the cookie bites in an airtight container for at least 1 hour until firm.

                    Serve the frozen blueberry lemon cookie bites directly from the freezer, garnishing them with extra lemon zest for a pop of flavor.
