Ingredients

2 ripe bananas, sliced

1 cup fresh strawberries, hulled and sliced

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional toppings: granola, shredded coconut, or chopped nuts

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, 1 tablespoon of honey or maple syrup, lemon juice, and a pinch of salt. Mash them lightly with a fork or potato masher to create a chunky strawberry mixture. Set aside.

Blend the Bananas: In a blender or food processor, add the sliced bananas, Greek yogurt, 1 tablespoon of honey or maple syrup, and vanilla extract. Blend until smooth and creamy.

Swirl Together: In a large mixing bowl, combine the creamy banana mixture with the mashed strawberry mixture. Use a spatula to gently fold the strawberry mixture into the banana mixture, creating a swirl effect. Do not over-mix; you want to see both colors.

Fill the Molds: Pour the banana-strawberry mixture into popsicle molds, filling each one about three-quarters full. Leave a little space at the top for expansion when freezing.

Insert Sticks: If your popsicle molds have a built-in stick holder, insert the sticks. If not, you can place a small piece of parchment paper over the top and stick a wooden popsicle stick through the center of each mold.

Freeze: Place the filled popsicle molds in the freezer for at least 4-6 hours, or until completely frozen.

Unmold and Serve: To remove the popsicles, run warm water over the outside of the mold for a few seconds, or gently pull and twist the sticks. Serve immediately or store in a sealed container in the freezer for up to a week.

Optional Toppings: If desired, roll the pops in granola, shredded coconut, or chopped nuts before serving for added texture and flavor.
