2 ripe bananas

1 cup coconut cream (chilled)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

1/4 teaspoon sea salt

1/2 cup crushed graham crackers (for crust)

2 tablespoons melted coconut oil (for crust)

Optional toppings: sliced bananas, toasted coconut flakes, or dark chocolate shavings

Instructions
 

Prepare the crust: In a medium bowl, mix the crushed graham crackers with the melted coconut oil until well combined. Press the mixture evenly into the bottom of an 8x8-inch baking dish to form a crust. Place in the freezer to set for about 10 minutes.

    Blend the filling: In a blender or food processor, combine the ripe bananas, chilled coconut cream, honey or maple syrup, vanilla extract, shredded coconut, and sea salt. Blend until smooth and creamy. Taste and adjust the sweetness if desired.

      Assemble the squares: Once the crust has set, pour the banana-coconut filling over the crust. Spread it evenly with a spatula.

        Freeze: Cover the baking dish with plastic wrap or aluminum foil and freeze for at least 4 hours, or until firm.
