2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup peanut butter (or almond butter)

1/2 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

1/4 cup dark chocolate chips (optional)

1/2 cup chopped walnuts (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, almond flour, honey (or maple syrup), peanut butter, and vanilla extract. Stir until the mixture is smooth and well combined.

    Add the rolled oats, ground cinnamon, and salt to the banana mixture. Mix until all the dry ingredients are fully incorporated. If desired, fold in the dark chocolate chips and chopped walnuts for added flavor and crunch.

      Cover the bowl with plastic wrap or transfer the mixture to an airtight container and refrigerate for about 30 minutes. This allows the mixture to firm up, making it easier to shape.

        Once chilled, scoop out about a tablespoon of the mixture and roll it between your palms to form bite-sized balls. Repeat this process until all the mixture is shaped into energy bites.

          Place the energy bites on a parchment-lined baking sheet, ensuring they are spaced apart.

            Freeze the bites for 1-2 hours until they are solid.

              Once frozen, transfer the energy bites to a resealable freezer bag or airtight container. Label with the date and store them in the freezer for up to 3 months.
