3-4 ripe heirloom tomatoes (sliced)

1 cup fresh mozzarella cheese (sliced or torn)

1/2 cup goat cheese (crumbled)

1 tbsp Dijon mustard

1 tbsp olive oil

2 cloves garlic (minced)

1 tsp fresh thyme leaves (plus extra for garnish)

1/2 tsp sea salt

1/4 tsp black pepper

1 egg (beaten, for egg wash)

Balsamic reduction (for drizzling, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry to fit your baking sheet. Trim the edges to form a rectangle or circle, depending on your preference. Poke holes in the base of the pastry with a fork to prevent it from puffing up too much while baking.
