2 slices of thick bread (brioche or challah preferred)

2 large eggs

1/4 cup milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/2 tsp salt

1 cup cooked chicken breast, shredded (or leftover rotisserie chicken)

2 tbsp mayonnaise

1 tsp Dijon mustard

2 slices of cheddar cheese

2 slices of crispy bacon (optional)

Maple syrup, for drizzling

Fresh arugula or spinach, for garnish

Butter, for frying

Prepare the French Toast Mixture: In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until well combined.

    Soak the Bread: Dip each slice of bread into the egg mixture, making sure to coat both sides. Let it soak for about 1-2 minutes to absorb the mixture.

      Cook the French Toast: Heat a skillet over medium heat and melt a tablespoon of butter. Once the butter is bubbling, add the soaked bread slices to the skillet. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove and set aside.

        Prepare the Chicken Filling: In a mixing bowl, combine the shredded chicken with mayonnaise, Dijon mustard, and a pinch of salt and pepper. Mix until the chicken is evenly coated.

          Assemble the Sandwich: Place one slice of French toast on a plate. Layer with half of the chicken mixture, a slice of cheddar cheese, and crispy bacon if using. Top with a handful of arugula or spinach. Place the other slice of French toast on top.

            Extra Toasting (Optional): For a crispier sandwich, return the completed sandwich to the skillet and cook for an additional 2 minutes on each side, pressing down gently with a spatula.
