Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (room temperature)

1 large egg (lightly beaten)

2 tablespoons unsalted butter (melted, plus more for cooking)

1 teaspoon vanilla extract

Optional: Fresh berries, chocolate chips, or nuts for topping

Instructions

Prepare the Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until evenly combined.

Mix the Wet Ingredients: In a separate bowl, combine the buttermilk, beaten egg, melted butter, and vanilla extract. Whisk until smooth.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula or wooden spoon. Be careful not to overmix; it’s okay if there are a few lumps — this will help keep the pancakes fluffy.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Once hot, add a small pat of butter and allow it to melt, coating the surface of the pan.

Cook the Pancakes: For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles start to form on the surface (about 2-3 minutes), and the edges look set. Flip the pancake and cook for another 1-2 minutes or until golden brown.

Keep Warm: Remove the pancakes from the skillet and keep them warm in a low oven (about 200°F or 95°C) while you repeat the process with the remaining batter.

Serve: Stack the pancakes on a plate and add your favorite toppings such as fresh berries, a drizzle of maple syrup, whipped cream, or chocolate chips.
