3 cups all-purpose flour

1 teaspoon salt

1 cup unsalted butter, cold and cubed

1/4 cup vegetable oil

1/2 cup yogurt (preferably plain or Greek)

1 teaspoon baking powder

1 tablespoon vinegar

Water (as needed, about 2-4 tablespoons)

Sesame seeds (for sprinkling, optional)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour and salt. Whisk them together to evenly distribute the salt.

    Incorporate Butter: Add the cold, cubed butter to the flour mixture. Using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

      Add Wet Ingredients: In a separate bowl, whisk together the yogurt, vegetable oil, vinegar, and baking powder. Pour this mixture into the flour and butter mixture.

        Knead the Dough: Stir gently with a fork or spatula until the dough starts to come together. If it feels too dry, add water, one tablespoon at a time, until you form a soft, non-sticky dough.

          Resting Period: Shape the dough into a ball and wrap it in plastic wrap. Let it rest in the refrigerator for at least 30 minutes to allow the gluten to relax.

            Roll Out: Divide the dough into 4 equal portions. On a floured surface, roll out one portion into a 1/8-inch thick rectangle. You can use a rolling pin for this.

              Layering: Brush melted butter between layers of dough or sprinkle a little oil, then roll them into straws or logs before coiling them into a spiral shape. Repeat this process for all portions.

                Final Roll: Once coiled, you can gently roll the spirals into flat disks for your desired dish. If desired, sprinkle sesame seeds on top.

                  Chill Again: Place the formed disks or rolled dough back in the fridge for another 15-20 minutes before using. This ensures your dough remains flaky during baking or cooking.

                    Bake or Cook: Depending on your recipe, you can now either fill these flaky doughs with savory or sweet fillings, then bake them at 375°F (190°C) for about 20-25 minutes, or until golden brown.

                      Serve: Allow to cool slightly before serving. Enjoy your flaky Arabic dough in puff pastries, filled breads, or as a base for pies!
