4 large russet potatoes

150g crème fraîche

100g smoked bacon lardons (or pancetta)

1 medium onion, thinly sliced

100g grated Gruyère cheese

2 tablespoons olive oil

1 teaspoon fresh thyme leaves

Salt and pepper to taste

Fresh chives, for garnish

Instructions
 

Prep the Potatoes: Preheat your oven to 200°C (400°F). Scrub the russet potatoes clean, then prick them a few times with a fork to allow steam to escape. Rub the potatoes with olive oil and a sprinkle of salt.

    Bake the Potatoes: Place the prepared potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Cook the Bacon and Onions: While the potatoes are baking, heat a skillet over medium heat. Add the smoked bacon lardons and cook until they are crispy. Then, add the sliced onion to the skillet and sauté until they turn golden and caramelized (about 5-7 minutes). Remove from heat and set aside.

        Prepare the Filling: In a mixing bowl, combine the crème fraîche, cooked bacon and onion mixture, grated Gruyère cheese, fresh thyme, and season with salt and pepper. Mix well until all ingredients are evenly incorporated.

          Stuff the Potatoes: Once the potatoes have baked and are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out some of the flesh to create a well, leaving enough around the edges for stability. Add the scooped potato flesh to the filling mixture, combining it until creamy.

            Fill the Potatoes: Generously fill each potato half with the bacon and cheese mixture. Place them back on a baking sheet.

              Final Bake: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the tops are golden brown and bubbly.
