Ingredients

2 lbs chicken wings

1 ripe mango, peeled and diced

3-4 habanero peppers (adjust to heat preference, seeds removed for less heat)

4 cloves garlic, minced

1 inch ginger, grated

1/4 cup fresh lime juice

1/4 cup honey

1/4 cup soy sauce

1 tablespoon vegetable oil

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a blender, combine the diced mango, habanero peppers, minced garlic, grated ginger, lime juice, honey, soy sauce, vegetable oil, cumin, salt, and black pepper. Blend until smooth.

Marinate the Wings: In a large bowl, add the chicken wings and pour the mango-habanero marinade over them. Toss the wings to ensure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably up to 4 hours for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top to allow air circulation around the wings.

Arrange the Wings: Remove the wings from the marinade, letting the excess drip off. Arrange them in a single layer on the wire rack. Reserve the remaining marinade for basting.

Bake the Wings: Bake the wings in the preheated oven for 25-30 minutes, flipping them halfway through, until they are crispy and cooked through. If desired, you can broil the wings for an additional 2-3 minutes at the end for extra crispiness.

Baste the Wings: About 5 minutes before they finish cooking, brush the wings with the reserved marinade to add flavor and stickiness.

Garnish and Serve: Once cooked, remove the wings from the oven and let them rest for a few minutes. Garnish with chopped cilantro and serve with lime wedges on the side for an extra zesty kick.
