Feta and Tomato Baked Pasta

300g pasta (penne or rigatoni)

200g cherry tomatoes, halved

200g feta cheese, crumbled

3 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Sauté the Aromatics: In a large oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

        Add Tomatoes and Feta: Stir in the halved cherry tomatoes, crumbled feta cheese, oregano, basil, red pepper flakes, salt, and pepper. Cook for about 5 minutes, until the tomatoes start to soften.

          Combine with Pasta: Add the cooked pasta to the skillet, mixing everything gently. If the mixture seems dry, add a bit of the reserved pasta water—just enough to keep it creamy.

            Bake the Pasta: Spread the pasta mixture evenly in the skillet. Bake in the preheated oven for about 20-25 minutes, until the top is golden and bubbly.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves and serve with a sprinkle of grated Parmesan cheese, if desired.
