Fall Crockpot Sausage and Sweet Potato Stew

Ingredients
  

1 pound Italian sausage (mild or spicy, your choice), casing removed and crumbled

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup carrots, sliced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

2 cups kale or spinach, chopped

1 tablespoon olive oil

Optional: fresh parsley for garnish

Brown the Sausage: In a skillet over medium heat, add olive oil and crumble in the Italian sausage. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary, then transfer the sausage to the crockpot.

    Prep the Vegetables: In the same skillet, add diced onions, minced garlic, and red bell pepper. Sauté for about 3-4 minutes, until they start to soften. Transfer these to the crockpot.

      Add Sweet Potatoes and Carrots: Add the cubed sweet potatoes and sliced carrots to the crockpot over the sausage and vegetables.

        Combine Remaining Ingredients: Pour in the diced tomatoes (with juices) and broth. Sprinkle in the thyme, smoked paprika, black pepper, and salt. Stir gently to combine all ingredients.

          Cook on Low: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until sweet potatoes and carrots are tender.

            Add Greens: About 20-30 minutes before serving, add the chopped kale or spinach to the stew. Stir and allow it to wilt and cook until tender.

              Taste and Adjust: Before serving, taste the stew and adjust seasoning if necessary. If you prefer a thicker stew, you can mash a few sweet potato cubes against the side of the crockpot to release their starch.
