8 oz elbow macaroni

2 cups butternut squash, peeled and cubed

1 cup broccoli florets

1 cup cauliflower florets

1 cup baby spinach

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (whole or plant-based)

1 cup vegetable broth

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Pasta: Start by boiling the elbow macaroni in salted water for about 5 minutes, just until slightly undercooked. Drain and set aside.

    Combine the Veggies: In a large bowl, mix the cubed butternut squash, broccoli florets, cauliflower florets, and baby spinach.
