Fall Crockpot Chicken and Barley Stew

1.5 pounds boneless, skinless chicken thighs

1 cup pearl barley, rinsed

4 cups low-sodium chicken broth

2 cups carrots, sliced

1 cup celery, chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup butternut squash, cubed

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon dried sage

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 bay leaf

Fresh parsley, chopped (for garnish)

Prep the Chicken: Heat olive oil in a skillet over medium heat. Season the chicken thighs with salt and pepper, then sear them in the skillet until browned on both sides (about 3-4 minutes per side). This step adds depth of flavor but is optional if you're short on time.

    Layer the Ingredients: In your crockpot, place the seared chicken thighs at the bottom. Add the sliced carrots, chopped celery, diced onion, and cubed butternut squash.
