2 medium zucchinis (about 1.5 cups grated)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

    Prepare the Zucchini: Wash the zucchinis thoroughly, and then grate them using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towel and squeeze out any excess moisture. Set aside.

      Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Whisk together until well mixed.

        Combine Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Fold in the grated zucchini, and if using, the walnuts or pecans and raisins or chocolate chips. Be careful not to overmix.

            Pour and Bake: Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

              Cool: Remove the zucchini bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

                Serve and Enjoy: Cut the bread into slices and serve as is, or with a spread of butter or cream cheese.
