Easy Vegetable Beef Soup

1 lb (450g) beef stew meat, cut into bite-size pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 bell pepper, diced (any color)

1 cup green beans, chopped

4 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

1 cup frozen peas

Fresh parsley, chopped for garnish (optional)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sear on all sides until browned (about 5-7 minutes). Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the carrots, celery, and bell pepper, cooking for an additional 5 minutes until they begin to soften.

      Combine Ingredients: Return the browned beef to the pot. Stir in the green beans, beef broth, diced tomatoes, thyme, oregano, bay leaf, and season with salt and pepper. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low. Cover and let it simmer for 1 hour, or until the beef is tender, stirring occasionally.

          Add Peas and Finish: After an hour, add the frozen peas to the soup, cooking for an additional 5 minutes. Remove the bay leaf before serving.

            Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy hot!
