Ingredients

1 package (12 oz) of graham crackers, crushed

1/2 cup unsalted butter, melted

1 cup fresh strawberries, hulled and sliced

1 quart vanilla ice cream, softened

1 quart strawberry ice cream, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

Fresh strawberries and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9x13 inch baking dish to form an even layer. Refrigerate while you prepare the layers.

First Ice Cream Layer: Once the crust is set, remove it from the refrigerator. Spread the softened vanilla ice cream evenly over the crust. Use a spatula to smooth it out, ensuring it reaches the edges. Return to the freezer for about 30 minutes to allow it to firm up.

Add Strawberries: After the vanilla ice cream layer is firm, layer the sliced fresh strawberries evenly on top of the vanilla ice cream. Press them gently into the ice cream so they adhere well.

Second Ice Cream Layer: Spread the softened strawberry ice cream over the layer of strawberries. Again, smooth it out with a spatula. Return the dish to the freezer for another 30 minutes.

Whipped Cream Topping: In a chilled bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form. This should take about 3-5 minutes with an electric mixer.

Final Assembly: After the strawberry ice cream layer has set, remove the dessert from the freezer. Spread the whipped cream over the top in an even layer. Use a spatula or a piping bag for a decorative finish, if desired.

Freeze: Cover the dish with plastic wrap or aluminum foil and freeze for at least 4 hours, or until solid.

Serve: When ready to serve, remove the cake from the freezer and let it sit at room temperature for about 5-10 minutes for easier slicing. Garnish with fresh strawberries and mint leaves, if using. Slice and indulge!
