Ingredients

1 pound raw shrimp, peeled and deveined

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup finely chopped green onions

1/4 cup red bell pepper, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Dijon mustard

1 teaspoon Old Bay seasoning

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Lemon Aioli:

1/2 cup mayonnaise

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 clove garlic, minced

Salt and pepper to taste

Instructions

Prepare the Shrimp:

    - In a food processor, add the shrimp and pulse until they are finely chopped but not puréed. You want a chunky texture, so be careful not to over-process. Transfer to a mixing bowl.

      Combine the Mixture:

        - To the bowl with the shrimp, add breadcrumbs, green onions, red bell pepper, minced garlic, egg, Dijon mustard, Old Bay seasoning, salt, and pepper.

          - Mix everything together until well combined. You can use your hands or a spatula to ensure the ingredients are evenly incorporated.

            Form the Cakes:

              - Using your hands, form the mixture into small patties, about 2 to 3 inches in diameter. This recipe will yield about 8-10 shrimp cakes depending on size.

                Chill the Cakes:

                  - Place the formed shrimp cakes on a plate and refrigerate for about 20-30 minutes. This step helps them to firm up and hold their shape while cooking.

                    Make the Lemon Aioli:

                      - In a small bowl, whisk together the mayonnaise, fresh lemon juice, lemon zest, minced garlic, salt, and pepper. Adjust seasoning to taste, adding more lemon juice or salt as desired. Set aside.

                        Cook the Shrimp Cakes:

                          - Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the shrimp cakes to the skillet, making sure not to overcrowd the pan.

                            - Cook for about 4-5 minutes per side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

                              Serve:

                                - Serve the crispy shrimp cakes warm, drizzled or served alongside the lemon aioli for dipping. Garnish with extra lemon wedges and fresh herbs if desired.
