2 ¼ teaspoons active dry yeast (1 packet)

1 cup warm water (about 110°F/43°C)

3 tablespoons granulated sugar

3 cups all-purpose flour, plus extra for dusting

1 teaspoon salt

¼ cup unsalted butter, melted

½ cup baking soda (for boiling)

1 large egg, beaten (for egg wash)

Coarse sea salt (for topping)

Activate the Yeast: In a small bowl, combine the warm water and granulated sugar, sprinkle the yeast on top, and let it sit for about 5-10 minutes, until frothy.

    Make the Dough: In a large mixing bowl, combine the flour and salt. Pour the yeast mixture and melted butter into the flour mixture. Mix until a dough forms.

      Knead and Rise: On a lightly floured surface, knead the dough for about 6-8 minutes until smooth. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Shape the Rolls: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and arrange them closely in a greased round or square baking pan.

          Prepare the Baking Soda Bath: In a large pot, bring 8 cups of water and the baking soda to a gentle boil. Gently place each roll into the boiling water for about 30 seconds, turning them halfway. Remove with a slotted spoon and place back onto the prepared baking pan.

            Egg Wash and Bake: Brush the tops of the rolls with the beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 15-20 minutes or until golden brown.
