1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups chicken broth

1 pound cooked chicken, shredded (rotisserie chicken works great)

1 teaspoon dried thyme

1 teaspoon dried basil

1 cup heavy cream

1 package (16 ounces) gnocchi

2 cups fresh spinach

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Broth and Chicken: Pour in the chicken broth and add the shredded chicken to the pot. Bring the mixture to a gentle simmer.
