4 cups fresh corn kernels (about 5 ears of corn or 2 cans of drained corn)

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1/2 cup fresh cilantro, chopped

1 avocado, diced

1/2 cup cotija cheese, crumbled (or feta cheese)

1/4 cup mayonnaise

2 tablespoons lime juice (about 1 lime)

1 teaspoon chili powder

Salt and pepper, to taste

Prep the Corn: If using fresh corn, boil the corn on the cob for about 3-5 minutes until tender. Remove from water and allow to cool. Once cool, slice the kernels off the cob and set aside. If using canned corn, drain and rinse in cold water.

    Combine Vegetables: In a large mixing bowl, combine the corn kernels, halved cherry tomatoes, diced red onion, and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth. Adjust seasoning according to taste.
