Easy Italian Pasta Antipasto

Ingredients
  

8 oz (225g) pasta (your choice: fusilli, penne, or farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black and green olives, pitted and sliced

1/2 cup salami, sliced into strips

1/2 cup mozzarella balls (bocconcini)

1/4 cup red onion, thinly sliced

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp garlic powder

Salt and pepper, to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside in a large mixing bowl.

    Chop Fresh Ingredients: While the pasta is cooking, prepare the antipasto ingredients. In a medium bowl, combine cherry tomatoes, cucumber, red bell pepper, olives, salami, mozzarella balls, and red onion.

      Make the Dressing: In a small bowl or jar, combine the olive oil, red wine vinegar, garlic powder, salt, and pepper. Whisk together or seal the jar and shake well until emulsified.

        Combine Ingredients: Once the pasta has cooled, add the chopped vegetables, meats, and cheese to the pasta bowl. Pour the dressing over the pasta mixture.

          Toss & Serve: Gently toss all ingredients together until well combined. Add the fresh basil and give it one last gentle mix.

            Chill (Optional): For the best flavor, cover and refrigerate for at least 30 minutes before serving to let the flavors meld together. Serve cold or at room temperature.
